You should always be aware of what the name of the coffee is. There are many variations of coffee beans, all of which have their own distinct flavors and characteristics that will effect how they brew.

There are two main types of coffee, Arabica coffee, and Robusta coffee. Arabica coffee originated in Ethiopia and is believed to have the better smell and taste, while Robusta coffee tends to be bitter and has a very distinct taste. Many coffee consumers choose Arabic coffee over Robusta coffee for those reasons.

Coffee beans are also classified by how they are roasted. Coffee beans are not brown when they are harvested, but instead they are green. They resemble a legume that has been dried and rarely look anything like the final roasted bean. They roasted immediately by professionals, and how long they roast decides their color and their flavor strength.

You should decide how strong you would like your coffee to be, from there you will be able to decide if you want a lighter color, which will be milder in flavor, or a darker color, which will be stronger in flavor. Keep in mind that their are many names for the different roasts. Some of the light roasts include names like New England, Cinnamon, and Light.

The coffee beans of light roasts tend to look like milk chocolate in color, and they will contain more caffeine than coffee of dark roast. Light roasted coffee beans actually contain around ten percent more caffeine than dark roast beans.

The beans that are dark in color but have spots on them are the medium roast coffees. The only difference between this roast and the other roast is that it has less acidity than the light roasts. This is also the coffee for you if you are looking for a more nutty and spicy flavor. Many experts feel that a medium roast of either Arabic or Robusta will contain the best of the flavors and aromas of that particular coffee. One of the best varieties of medium roast coffee is Costa Rica coffee.

Last is the dark roast whose features tend to be very shiny and oily, and next to black in color. The flavor of dark roasts tend to be very deep and smoky. These roasts have a far more bitter taste to them than the other roasts. One example of this being the Mocha Java roast, which is advertised specifically for its strong aroma and flavor.

You should always choose coffee where the beans have been roasted while they were still fresh. You also want the beans to be whole and of good shape. One of the best ways to tell a coffee is good, is to smell it. If you smell a coffee and feel like that is the coffee for you, then most likely it is.
